Snapshots of Summer, So Far

Our days are wake up, get outside, jump in a pool, eat from the garden, play with friends, sleep, and repeat. Kind of makes you wonder how we ever survived winter... 
The strawberry Italian water ice is a new family favorite recipe. You do need an ice cream maker, but I found mine at a yard sale a few weeks ago and have used it several times already. Here's a recipe- (actually, more of a formula for strawberry watermelon water ice- you may substitute any combination of fruit you like.)

Strawberry Melon Italian Water Ice

Combine one part confectioners sugar to four parts fruit puree + a few splashes of lemon juice, to taste. Mix well with a whisk. Remove any seeds you find annoying (we don't). Pour into ice cream maker and run for about 30 minutes or until it reaches desired consistency. Freeze leftovers in containers. This is a great way to preserve an over-abundant harvest for winter enjoyment!
