Sausage and Pepper Calzones

Once in a while Andrew gets sick of all the.... vegetables. To get him through his rut I make him a good old fashioned calzone. Complete with tons of processed cheese, sausage in a weird plastic casing, and well, I do sneak some veggies in there too ;) You can use a store bought pizza dough (you'll need two of those to make a calzone this large) or you can whip up some pizza dough in your bread machine. Seriously, I just throw the ingredients in the bread machine and an hour and a half later I have pizza dough. It's like a miracle. The recipe follow the pictures.




Sausage and Pepper Calzones
preheat oven to 375, easily serves 4 people 

Dough (place into bread machine in this order, and then turn it on the dough setting):
1 1/3 cups lukewarm water
1 Tbs olive oil
4 cups bread flour
1 tsp sugar or honey
2 tsp salt
2 1/4 tsp instant yeast

Or... Use a store bought dough. :)

Filling:
Saute 1 lb of ground sausage with 1 whole chopped red pepper and one whole chopped tomato over medium heat. Drain well and cool. Add desired amount of cheese. I used about 1 cup of American cheese, chopped.

1. On a floured surface, roll out your dough in a large rectangle about 1/2 inch thick. Transfer to prepared baking sheet.
2. Pour drained filling along the center of the dough, leaving about 3 inches on either side of the rectangle.
3. Make slits in the dough along the sides of the filling with a pizza cutter. Fold the sectioned dough, sort of like a braid, along the length of the calzone to seal it.
4. Bake at 375 until the top is browned and the filling is bubbling inside. This should take about 25 minutes.
5. Cool slightly and serve!
