I recently became addicted to River Cottage videos, as well as their cookbooks. When I came across this chocolate chip recipe, I had to try it. It was a little extra work converting from metric measurements, but I'll post the standard measurements to cut that step out for you. Stove top cookies have a unique texture- crisp outside and soft and chewy inside. I really liked this method and I'l be on the lookout for similar recipes.
River Cottage Stove-top Chocolate Chip Cookies
preheat oven to 350 degrees
1 stick of butter
1 1/2 cups of white sugar
3/4 cup brown sugar
2 tsp vanilla
1 1/2 cups flour
1 tsp baking powder
1/2 tsp sea salt
1/2 cup chocolate chips
In a saucepan, melt the butter over low heat.
Remove from heat and stir in the sugars
Add the egg, salt, and vanilla and mix well to incorporate.
Sift the flour/baking powder and add it in four additions.
Add the chocolate chips, stirring just enough to evenly disperse them
Spoon onto a baking sheet with ample room in between each cookie onto a parchment line baking sheet
Bake for 10 minutes- add one to two minutes more for larger cookies.
Store in an airtight container for up to one week!
