Rainy Day Vegetarian Chili (in the slow cooker)
There really isn't a recipe for this one. It's so quick, you just throw the ingredients in a crock pot on low until you're ready to eat. Go to work, come home, eat dinner. I served the chili over Quinoa (for extra protein) and put cheese on top. Here's what I put in my chili: One jar of tomato sauce, one tomato sauce jar filled with water (or use veg broth), 1 cup firm tofu chopped fine, two tomatoes chopped, one red pepper chopped, 1 cup mushrooms, one zucchini, 2 cups of spinach, 2 tsp chili powder, 2 cloves garlic, 1 tsp red pepper flakes, 2 tsp cumin, salt/pepper to taste.
