I don't come from a long line of pancake eaters. We were more 'Eggo-waffle-people.' While I still appreciate an Eggo waffle at Mom and Dad's, I settled on a pancake recipe from 'Good Cheap Eats' that the kids love and it takes me very little time to make. One bowl recipes are my go to choice in this season of life. Here's a good one for Apple Pie Pancakes.
Combine these ingredients in a bowl:
3 1/3 cups milk
2 eggs (we substitute 6 tablespoons of flax meal mixed with 6 tbs of warm water for the eggs)
1/3 cup oil
3 cups flour
3 tablespoons sugar or stevia
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
and spoon desired amount of batter in whatever shape you want.
This is the part where I deviate from the recipe I started with. On a whim once I threw some apple slices in from our canned apple pie filling surplus. It turned out really tasty! And you can heat up the liquid from the filling and use that rather than syrup.
See the flax meal? We substituted that for the eggs. Makes it look healthier, doesn't it?
And the little boy with the egg allergy can even enjoy them that way!
